Lentil soup crockpot forgetful parent set - Busy 30-45 dinner done forget daily
This is not a recipe; it is a system designed to rescue your dinner plans on days when your brain is full. The goal is to do the thinking on a low-stress day, so the busy-day execution requires zero mental effort.

First, create your "Forgetful Parent" soup kits. Do this on a Sunday when you have a spare 20 minutes. You will make several at once. For each kit, you need two zip-top bags.
In the first bag (the dry bag), combine: 1 cup of brown or green lentils, 1 teaspoon cumin, 1 teaspoon smoked paprika, 1/2 teaspoon dried thyme, 1 teaspoon salt, 1/2 teaspoon black pepper, and 1 bay leaf. A common beginner mistake is using red lentils; they turn to mush. Stick with brown or green as they hold their shape. To prep the lentils, rinse them in a fine-mesh sieve under cool water until it runs clear, then spread them on a paper towel to air dry for 15-20 minutes before bagging. Use a permanent marker to write "ADD 6 CUPS BROTH" directly on this bag. Seal it. It’s shelf-stable. Make 3-5 of these and line them up in your pantry.
In the second bag (the veg bag), combine: 1 diced onion, 2 chopped carrots, and 2 chopped celery stalks. You can buy these pre-chopped to save even more time. For extra flavor, toss in 2-3 whole, peeled garlic cloves. They will melt into the soup. Use quart-sized freezer bags and press them flat before sealing to remove air. This prevents a giant frozen block and makes them easy to stack. Seal the bag and put it directly into the freezer. Make 3-5 of these as well.
Your morning "set" routine takes three minutes. Set a recurring daily alarm on your phone for 7:30 AM labeled "DUMP SOUP." When it goes off, walk to the kitchen. Put a crockpot liner in your slow cooker (a 6-quart model is perfect). This is non-negotiable; it means cleanup is throwing a bag away. Dump the contents of one frozen veg bag into the liner. Dump the contents of one dry bag on top. Pour in 6 cups of vegetable or chicken broth. A standard 32oz box of broth is 4 cups, so just dump that in and add 2 cups of water. No precise measuring needed. Give it one quick stir, put the lid on, and set it to LOW for 7-8 hours.
When you get home, remove and discard the bay leaf. Taste it. It will likely need another pinch of salt. For a richer texture, use an immersion blender for just 3-4 quick pulses in the pot. This thickens it slightly without turning it into a puree. If the soup is thicker than you like, just stir in a splash more water or broth. Serve with crusty bread. The best part? Your slow cooker pot is still perfectly clean. Just lift the liner and throw it away.
