This single-serving bread is a game-changer for anyone needing a quick, high-fiber, zero-net-carb bread substitute. The magic ingredient is whole psyllium husks, which create a surprisingly bread-like, spongy texture without any flour or almond flour.

1 large egg
1 tablespoon whole psyllium husks (do not use psyllium powder, as it will result in a gummy texture)
1 tablespoon melted butter, ghee, or coconut oil
2 tablespoons water
1/4 teaspoon baking powder
A small pinch of salt
First, thoroughly grease the inside of a standard microwave-safe mug or a small ramekin. This step is critical to prevent the bread from sticking.
In a separate small bowl, whisk the egg very well until it's light and a little frothy. Incorporating air at this stage is key to achieving a fluffy final product rather than a dense, eggy puck.
Add the melted butter (or oil), water, and salt to the whisked egg. Mix until everything is fully combined.
Now, add the whole psyllium husks and the baking powder to the wet mixture. Immediately start whisking vigorously. The batter will thicken into a gel-like consistency almost instantly. Do not let it sit; mix for about 15 seconds until just combined and then stop. Over-mixing can make it tough.
Quickly scrape the thick batter into your prepared mug. Use a small spatula or the back of a spoon to get all of it in and gently smooth the top.
Microwave on high for 90 seconds. The bread will puff up considerably over the top of the mug. Check for doneness by lightly touching the top; it should be firm and spring back.
