Quick Summary

Garlic Chive Seeds are planting seeds for Allium tuberosum — the flat-leaf perennial herb known in Vietnamese as Hẹ Lá, in Chinese as Jiǔ Cài (韭菜) or Gāu Chóy (Cantonese), and in Japanese as Nira. This is a seed product for growing your own garlic chives — not fresh cut chives, dried seasoning, garlic bulbs, onion sets, or a live transplant. Each pack contains 2000 seeds (2 packs included). Garlic chives are a clump-forming perennial allium with flat, solid, strap-like leaves that taste of mild garlic rather than the mild onion of common round chives. The plant produces ornamental white flower clusters in late summer that are themselves edible and attractive to pollinators.

  • Ideal For: Kitchen herb beds, raised bed edges, container herb gardens, edible ornamental borders, pollinator-friendly gardens
  • Growing Conditions: Full sun to part shade, USDA zones 3–9, well-drained fertile soil, moderate moisture
  • Key Characteristics: Flat garlic-flavored leaves, white flower umbels, cut-and-regrow perennial, 2 Pack x 2000 seeds

About Garlic Chives — Hẹ Lá / Jiǔ Cài

Allium tuberosum is one of the most important culinary herbs in Vietnamese and Chinese cooking — a clump-forming perennial allium with flat, solid, strap-like leaves that carry a clean, mild garlic flavor rather than the mild onion note of common round chives (Allium schoenoprasum). The leaves are solid (not hollow like common chives), flat, and typically 30–50 cm long when mature. In late summer, the plant sends up slender stalks topped with fragrant, star-shaped white flower umbels — each flower head a globe of small white stars that are edible, ornamental, and a magnet for bees.

In Vietnamese kitchens, hẹ is an everyday herb — used in canh hẹ (garlic chive soup), in dumpling and spring roll fillings, in stir-fries with pork, beef, or shrimp, and snipped raw over noodles, congee, or grilled meats. The tender flower stalks, picked while still in tight bud, are a delicacy stir-fried on their own. Growers who blanch the shoots under cover produce hẹ vàng — pale yellow garlic chives with a sweeter, milder flavor prized in Vietnamese and Chinese cooking.

In Chinese cooking, jiǔ cài (韭菜) is indispensable in dumpling fillings (particularly pork and chive dumplings, jiǔ cài jiǔzǐ), in egg stir-fries, and in noodle dishes. The blanched yellow version (jiǔ huáng, 韭黄) is a separate culinary product with its own distinct character.

  • Flat, solid, garlic-flavored leaves — distinct from hollow round common chives
  • Known as Hẹ Lá in Vietnamese, Jiǔ Cài (韭菜) in Chinese, Nira in Japanese
  • Cut-and-regrow perennial — one planting provides years of harvests
  • White ornamental flower umbels in late summer — edible and pollinator-friendly
  • Blanching produces Hẹ Vàng / Jiǔ Huáng — pale yellow chives with sweeter, milder flavor
  • Cold-hardy across USDA zones 3–9 — dies back in hard winters, returns reliably each spring

Master Sowing & Growing Guide

Step 1 — Soil & Location

Choose a site with full sun to part shade and well-drained, fertile soil. Garlic chives tolerate a range of soil types but perform best in loamy, moderately fertile soil with a pH of 6.0–7.0. Amend heavy clay with compost to improve drainage. For containers, use a good-quality potting mix in a pot at least 20 cm deep.

Step 2 — Sowing

Indoors (recommended for best results): Start seeds indoors 6–8 weeks before last frost. Sow seeds 5–10 mm deep in seed trays or small pots. Keep soil consistently moist at 18–24°C (65–75°F). Germination is slow and uneven — expect 10–21 days. Thin to 5 cm apart when seedlings are 5 cm tall.

Direct sowing outdoors: Sow after last frost when soil has warmed to at least 15°C (60°F). Sow seeds 5–10 mm deep in rows 20–30 cm apart. Keep soil moist until germination. Thin to 10–15 cm apart.

Transplanting: Transplant indoor-started seedlings after last frost, spacing clumps 15–20 cm apart. Water in well.

Step 3 — Watering & Feeding

Keep soil consistently moist during establishment. Once established, garlic chives are moderately drought-tolerant but produce better leaves with regular watering. Avoid waterlogging. Feed with a balanced fertilizer or compost top-dressing in spring and after heavy harvests to maintain leaf production.

Step 4 — Harvesting

Year 1: Harvest lightly — the first season goes mostly into building roots. Allow the clump to establish before cutting heavily.

Year 2 onward: Cut-and-come-again: snip a handful of leaves about 2–3 cm above the crown. The clump pushes fresh growth within 2–3 weeks for another cutting. Regular cutting through the season keeps leaves tender and the plant productive.

Flower stalks: Pick tender flower stalks while still in tight bud for stir-frying. If you want to prevent self-seeding, remove spent flower heads before seed pods ripen.

Hẹ Vàng (blanched yellow chives): Cover the clump with an opaque pot or box for 2–3 weeks to exclude light. The shoots will grow pale yellow with a sweeter, milder flavor.

Step 5 — Division & Maintenance

Every 3–4 years, lift and divide crowded clumps in spring to renew vigor and prevent overcrowding. Replant divisions 15–20 cm apart. Division also produces new plants for other parts of the garden.

Kitchen Applications

  • Canh hẹ (Vietnamese garlic chive soup): A simple, fragrant soup — garlic chives added to a light broth with egg or tofu.
  • Dumpling & spring roll fillings: Chopped garlic chives mixed with pork, shrimp, or tofu — a classic Vietnamese and Chinese filling.
  • Stir-fries: Add near the end of cooking with pork, beef, shrimp, or eggs. The leaves wilt quickly and should not be overcooked.
  • Raw garnish: Snipped over noodles, congee, grilled meats, or soups for a fresh garlic note.
  • Flower stalks: Stir-fried on their own or with eggs — a seasonal delicacy.
  • Hẹ vàng (blanched yellow chives): Used in premium dumpling fillings and stir-fries for a sweeter, milder garlic flavor.
  • Savory pancakes & omelets: Folded into egg dishes for a fragrant allium note.

Common Growing Problems & Solutions

Problem Likely Cause Fix
Slow or patchy germination Normal for Allium tuberosum; old seed germinates less reliably Sow thickly; maintain 18–24°C; keep soil moist; be patient (up to 21 days)
Yellowing leaves
